Osh Also called plov, or pilof, this national dish is made of rice,
oil (traditionally cotton oil or sheep fat) and onions, carrots, raisins, chic
peas, and a little mutton on top. The white pieces are fat since they need the
calories and the fat holds all the flavor. The locals eat osh at least once a
week; at a cafe osh and salad cost about 30 cents.
