Ryia making chuchuvara
For Navruz (March 21 celebrating the advent of spring), Guli taught us how to make a national Uzbek dish called chuchuvara. It's basically little dumplings or tortilini. Usually it's made with meat and spices, but in spring when everyone is a bit anemic from the long winter without many greens, they use a vegetable filling. We sauteed spinich, mint, and clover with cumin and caraway seeds and the wrapped it in the dough that I we made from scratch. Finally we boiled it and it was so delicious! However the 3 hours of prep work make me think I won't be making it again until next navruz! Here Ryia is filling the chuchuvara as she sits on our enclosed veranda.
